Peanut butter cookies are a favorite in our house and Christmas would not be the same without them. Soft, easy and absolutely delicious.
Since I could remember my mother in law used to make them for my husband. If she could not be with us a huge batch was mailed to us. I did continue the tradition that she instill with my husband. A little bit of her is with us with each holiday seasons. I just made them for Giangi’s Kitchen and wanted to share the recipe with you.
PEANUT BUTTER COOKIES
1 cup sugar
1 cup brown sugar, packed firmly
1 cup unsalted butter
1 cup peanut butter, creamy
1 teaspoon baking soda
1 tablespoon vanilla extract
2 ½ cups flour
Preheat oven at 375F. Line baking sheet with parchment paper or a silpat.
Cream together sugar, brown sugar and butter. Add eggs, peanut butter and vanilla extract. Sift flour and baking soda together and add to the butter egg mixture.
Once well incorporated, form into ball, one inch apart on a baking sheet and flatten with the back of a fork making a crisscross pattern. Bake 10 minutes. The edges should start to brown and the middle still a bit firm.
